Brown Rice & Peas

1 1/3 Cups raw brown rice

2 2/3 Cups hot water

1 Cup fresh shelled or frozen green peas

1/2 Cup dry split peas, cooked until just tender

1/2 Cup grated cheese (optional)

Cook rice until almost all of liquid is absorbed.  Stir in the fresh or frozen peas and cook about 1 minute until warm.  Don't overcook.  Add the cooked split peas and grated cheese.

The combination of the brown rice and dry split peas gives complimentary protein.  The cheese may be omitted.


Rice & Veggies

1 cup brown rice

1/4 cup lentils

1/4 cup split peas

1/4 cup barley

Add

1 3/4 cup water - microwave on high for 30 minutes.

Add

1/4 cup couscous

1/4 cup frozen corn

1/4 cup frozen peas

Season with hot pepper flakes

For variations: add broccoli, carrots, cooked beans of any kind, or any veggie you have on hand.  Petamine can also be added to individual servings.  This mix can be frozen and then taken out ahead of time to thaw.
