Quiche For The Birds

 
bullet1/2 cup beans
bullet1/2 ear of corn or equivalent amount of frozen corn
bullet2 T. squash (any kind), chopped into 1/2" cubes
bullet1/2 small sweet potato or yam, cooked and cut into 1/2" cubes
bullet1 clove minced garlic
bullet1 egg (or egg substitute)
bullet1 T. skim ricotta cheese
bulletSome mixed veggies, frozen or fresh
bulletAvian vitamins
bulletCoarse ground Cheerios

Soak beans for 1 hour before preparing.  Drain.

Mix all of the above in a bowl.  Should be of pasty consistency but not runny.  Add water if necessary.  Spread onto plate, cover.  Cook in microwave on High for 6 minutes.  Remove and break up with a fork.  Sprinkle vitamins and mix well.  Sprinkle top with coarse ground Cheerios.

Veggie Delight

The purpose of this recipe is to show members ways in which vegetarian protein compliments may be used for avian care
bullet1 tsp. minced garlic
bullet1 stalk celery, finely chopped
bullet1 carrot, finely chopped
bullet1/2 Cup finely chopped greens (spinach, turnip, dandelions, etc.)
bullet1 pkg. tofu (approx. 20 oz.)
bullet1 egg beaten
bullet2 Tbsp. corn meal
bulletWheat germ

Sauté garlic, celery, carrot, greens in just enough oil to keep from sticking and until vegetables are soft.  Drain tofu in a strainer; then mash with fork and mix in egg and flour.  Add vegetables.  Form into small patties and roll in wheat germ. Brown on griddle or skillet.

Makes about 2 dozen small patties.  Celery, carrot and greens may be chopped together in food processor if desired.  This is an excellent soybean (a legume) based recipe with additional vegetables offering Vitamins A and B to the diet as well as the complimentary proteins of corn and wheat.
